Hi Dusty's Mom,
I'm afraid I don't have an answer for your question. My daughter is allergic to corn. Since corn can be hidden in so many foods, what we do is either pack a lunch for her or examine the labels closely for the cafeteria food she may eat on some particular day. The dietician at her school is kind enough to bring out the labels for me to see. The parents of the kids on gfcf diets that I know send special lunches and snacks for their kids to eat and ask school personnel to feed their kids nothing else. Maybe some other parents will have a different solution. By the way, how is Dusty doing on the gfcf diet? In what ways does it help him?

My daughter is at nursery here in the sleepy little backwater town I live in. She has been diagnosed autistic (AS) and has always had problems that - when her mother did a basic A-B-A-B single-case experimental protocol - turned out to be related to things with ... guess what ... yes, gluten in them.
In Finland, the rulings on provisions are so strict that it's a bloody wonder that anybody can get things referred to in them. We have to have a clear PROVEN diagnosis of coeliac gut before they will even countenance helping at the nursery (not the nursery's doing, I hasten to add, but that of the seriously anal-retentive local and national governments, and the medical officials in the country).
What we do is simple. My ex-wife makes gluten-free bread and takes some to nursery and some to my place, and that's how it goes. I am not looking forward to my daughter going to the idiotic schools in this town. Everything's about power play and dominance/subservience relationships here, and guess who has to be the subs... not gonna be me, I can tell you. Not where MY daughter is concerned.
DM, good luck with things, and hope you get something sorted out. I wish I could give something hopeful, but at least I can show you why I can commiserate. :(

Check out this site: http://www.formydiet.com/Information/Doc.aspx?a=103
The National School Lunch Program is required by law to comply with necessary special diets. This is part of ADA. You must have a note from your doctor. You should research this more before making demands, though. Seems that they are focusing on diabetes and severe food allergies. Can you make the case that gf/cf diet is necessary. I don't know...your child won't die without it as in the other two cases.
Good luck.
